Artisan Sourdough Crisps – Tuscan Herb
Available in 4 flavors: Naked, Tuscan Herb, Applewood Smoked and Cinnamon Raisin Maple Pecan.
After enjoying some tasty flatbread wedges that came with the charcuterie board at Castaway Restaurant in Burbank, I was inspired to create a flatbread using our own organic, gluten-neutral artisan sourdough loaves. After much R&D in our home kitchen and “beta tasting” at the bakery, we now have bags of these artisan sourdough crisps for sale.
It takes a lot of time and care to craft these crisps. First, we cure our Traditional Artisan Country Loaves for an extra 2 days to build flavor and strengthen the crumb so that we can slice these very thin (5mm). Then the slices are laid out on parchment-lined sheet pans and placed in our bread ovens for 12 minutes. When they’re done crisping, the pans are placed in our proofing cabinet to cool and finish drying naturally. Then the slices are weighed and placed in specially-labelled BPA-free slider bags for easy access. The whole journey for the making of crisps takes about a week!
To make the smoked and herb flavored crisps, we take the Naked crisps, spread them out on unbleached parchment paper, then lightly mist them with Ojai Olive Oil Company’s Organic Tuscan Herb-Infused Extra Virgin Olive Oil or Carolina Gramm’s Organic Applewood Smoked Extra Virgin Olive Oil. Then we place the freshly-misted crisps back in their BPA-free slider bag and they’re ready to go!
