I have had requests for keto-friendly items so I went on a mission to make muffins using organic, skinless almond flour from Yemetz Family Farms. After a few test batches, I’m ready to premier our first Gluten-free Keto/Plant Paradox-friendly Blueberry Muffins!
It takes 1/2 cup of batter to make each 3.5″ wide muffin. Crafted with Organic Blueberries, Organic Skinless Almond Flour, Non-Alcohol Process Organic Vanilla Extract, Organic Pastured Eggs, non-GMO Lightly Salted Butter, Organic Coconut Milk, Redmond Real Salt, Baking Powder, and sweetened with non-GMO Monk Fruit/Allulose blend. I even made the baking powder from scratch so it would contain no corn starch (which is a usual ingredient in baking powder).
