Introducing a sweet new treat: Gluten-free, Grain-free, Sugar-free, Plant Paradox-friendly Macadamia Nut Caramels!

With the success of our sugar-free, gluten-free Blueberry Muffins and Choco-Chip Chookies, I next turned my attention to the holy grail of comfort candy: Caramels! These are made in very small batches, enough to make 40 caramels per batch.

Though there are only 2 ingredients in the caramel base, butter and sugar (in our case, a healthy sugar replacement made from a blend of non-GMO Monk Fruit and Allulose, a prebiotic that feeds your microbiome), it takes time and care to mix those 2 ingredients continuously while monitoring the temperature until it reaches 320 degrees. At that point there’s no time to waste in pouring the molten caramel into the candy molds (for the Macadamia Nut version, the split nuts have been placed in each mold beforehand).

Once poured, the hot caramels set for about an hour, then get placed in the refrigerator. Before the last step of individually wrapping them, the caramels are placed in the freezer for an hour or so, to make the process less sticky!

At room temperature, these caramels are soft and chewy. For a more toffee-like experience, we recommend keeping them in the refrigerator. And for a nut-brittle hardness, freezing them does the trick; you can slap the wrapped caramel on a table and have a few caramel pieces to enjoy upon opening the wrapper!
